Olive and Feta or Mozzarella Bites
These are simple yet very attractive-looking bites. Mozzarella pearls are stocked in some supermarkets. Alternatively you could use a melon baller to make your own from a large mozzarella ball; I’ve tried it though and it’s a bit fiddly and time-consuming. If you cannot get hold of mozzarella pearls either substitute with mozzarella chunks or squares of feta if time/patience is an issue. Ingredients: 150g mixture of green and black stoned olives 120g tub semi-sun-dried cherry tomatoes marinated in olive oil, herbs and garlic or any sun-dried tomato in oil 25g fresh basil (a small bunch) 300g mozzarella pearls/feta cubes Wooden cocktail sticks Olive oil for drizzling Ground sea salt and ground black pepper for seasoning
Method: Slice the olives in two and cut the sun-dried tomatoes into slivers big enough to thread onto the cocktail sticks. Tear the basil into pieces. Assemble the canapés, ensuring that each cocktail stick gets at least one piece of mozzarella, semi-sun-dried tomato, olive and basil. Serve drizzled with olive oil and seasoned with a little salt and black pepper.
