Beetroot, Red Onion, Baby Leaves and Walnut Salad

Beetroot and walnuts are high in nutrients, which makes this tasty salad very good for you. Vacuum-packed beetroot is cooked and ready to use and has no additives. Chopped walnuts are usually available in the baking section of the supermarket.  – Sheila Kiely, Gimme the Recipe

 

Ingredients: – serves 4–5 1 small red onion 250g vacuum-packed cooked beetroot Baby salad leaves 2 tbsp chopped walnuts Olive oil to drizzle Sea salt and ground pepper to season

 

Method:  Peel the red onion then cut it in half and finely slice it. Cut the beetroot into bite-size chunks. Put the salad leaves in a bowl with the beetroot, red onion and chopped walnuts. Serve drizzled with olive oil and seasoned with salt and pepper.
